Zukes and Cukes

Since we are becoming flush in summer squash, zucchini and cucumbers, I thought I would share some links to a few great recipes. (I usually use summer squash and zucchini interchangeably in recipes. )

Zucchini Chips: (from my Dad) Thinly slice zucchini and/or summer squash. In a bowl or paper bag mix some flour (we use gluten free), salt and pepper. Toss the slices in the flour and then fry in vegetable oil. 



I only have one recipe that I have tried, but I hope to try some new ones this summer. 

Spicy Dill Refrigerator Pickles 

http://prudentbaby.com/2010/07/entertaining-food/refrigerator-pickles-part-2-classic-spicy-dill-2/    These are a great beginner pickle recipe, no actual canning because you store these in the fridge. 


I also love to shred zucchini and summer squash and freeze them in 2 cup portions for use all winter long. I throw them into soups or make zucchini bread for a taste of summer when the weather is at its worst.
